Apple Compôte

Sometimes I find it funny when I think about culinary terms that sound so complex yet have such simple meanings but we have to thank the French for adding sophistication to our lives. For example instead of julienne, why not just say cut into long thin strips? The same applies for compote, a compote is fruit cooked in sweet syrup. Anyway the good news is that when you hear something that may sound difficult to make, go for it because it is probably a lot easier than it sounds.

Compotes are really easy to make and they can enhance desserts or breakfast or be enjoyed alone for a healthier sweet fix. In this recipe I have used apples but you can use almost any fruit from figs to berries. Get creative and enjoy this fruit compote with your entire family.

Apple Compote

Ingredients
  1. 2 Granny Smith apples, peeled, cored & chopped
  2. 2 tablespoons unsalted butter
  3. 1/4 cup sugar
  4. 1/4 cup orange juice
  5. 1/2 lime, squeezed
  6. pinch of salt
  7. 1/2 teaspoon cinnamon
Instructions
  1. Heat a medium saucepan over medium to high heat before adding butter and sugar, once the sugar melts stir in orange juice and then add all the other ingredients except salt.
  2. Once small bubbles appear turn down the heat to low and simmer until apples are tender and juice has thickened into a thin syrup, after about 30 mins.
  3. Sprinkle a pinch of salt over the apples and enjoy!
Notes
  1. This recipe goes nicely with my rice pudding.
