Have you ever had clafoutis? Although it sounds like it could be a curse word, clafoutis (or clafouti) is a rustic French dessert traditionally made with black cherries. I love learning about new foods and when I was asked about clafoutis I couldn’t resist but to try it myself. This recipe is great because even if you are not a regular baker you can’t get it wrong, (or maybe you can but you really shouldn’t).  The ingredients are familiar, you don’t need any special equipment, and the prep and baking is over before you have time to get impatient.

Perhaps I should have saved this post for Valentine’s day since the colours scream Feb 14 but I wanted to share some love with you now. Love for food, love of others should be celebrated all year round anyway.

Clafoutis

Ingredients

  • 12oz fresh raspberries
  • 1 cup white chocolate chips
  • 3 eggs
  • 1 cup whole milk
  • 1/2 cup flour
  • 1/2 cup sugar
  • 2 tbsps Amaretto (optional)
  • Confectioner’s sugar (optional)
  • 1 tsp vanilla
  • pinch of salt

Method

  1. Preheat oven at 350 degrees.
  2. Put a white chocolate chip inside each raspberry and scatter across a greased 8″ baking pan, leaving a few for garnish.
  3. Beat the eggs until foamy and then add the remaining ingredients and whisk until smooth.
  4. Pour the batter over the raspberries and bake for 30-40 mins.
  5. Garnish with raspberries and confectioners sugar. Serve warm or cold.

    Clafoutis is one of my favourite desserts and raspberries are a ‘love’ berry! So delicious. It looks awesome! 🙂
